Polynesian Chicken Recipe

I recently joined the Around the World in 12 Dishes challenge, which has been an exciting adventure so far. The current destination is French Polynesia, a place I’ve always found fascinating. Even though my knowledge of geography isn’t the best, I knew instantly that this was the perfect spot to jump into the challenge. For those who aren’t familiar with this initiative, it’s a fun way to explore different cultures by traveling virtually through 12 countries, inspired by Phileas Fogg's journey in "Around the World in Eighty Days." Each stop involves cooking a dish with kids, making it both educational and enjoyable. This week, we decided to try our hand at making Polynesian Chicken. It seemed like a great choice because my family loves chicken and rice dishes, and this felt like a variation we could all enjoy. While I can’t guarantee its authenticity, it certainly hit the spot! To prepare Polynesian Chicken, we gathered all the ingredients and got to work. Here’s what we used: - Diced Chicken Breast - French Dressing - 1 Can Pineapple Chunks - 1/2 Cup Chicken Stock - 2 Tbsp Soy Sauce - 3 Tbsp Lemon Juice - 1 Tbsp Cornstarch - Sugar Snap Peas - 1 Can Water Chestnuts - 1 Spring Onion - Rice (for serving) The process was straightforward yet rewarding. First, we marinated the chicken breast in French dressing and baked it for about 10 minutes. Next, we mixed cornstarch with lemon juice, pineapple juice, and soy sauce to create a tangy sauce. After adding this mixture to the chicken, we popped it back into the oven for another 30 minutes. Finally, we tossed in the pineapple chunks, sugar snap peas, and spring onions, finishing everything off with a side of steamed rice. It was a collaborative effort—my kids were thrilled to help out, measuring ingredients and stirring pots. Watching their excitement made the entire experience even more meaningful. The end result? A flavorful, slightly sweet dish that everyone loved. Although it might not be strictly traditional, it was comforting and reminiscent of other Asian-inspired meals we’ve enjoyed at home. Cooking this dish reminded me how versatile and adaptable global cuisine can be. Whether or not it’s “authentic” doesn’t matter as much as the joy of sharing food together.
