Pancakes for Christmas Breakfast
I’ve always had a soft spot for the classic book "Pancakes for Breakfast" by Tomie DePaola. Published in the same year I was born, it's a timeless story that never fails to bring joy. Though it’s wordless, it's perfect for young kids to practice storytelling and creativity. This holiday season, we’re putting a festive spin on pancakes with our Snowman pancake recipe.
While I don’t manage to whip up pancakes every morning, they’re definitely reserved for special occasions like Christmas. There’s something magical about starting the day with a stack of snowman-shaped pancakes—it just feels right for the season. Since I’m not exactly the morning person type, I’ve learned to plan ahead. Pancake batter keeps beautifully in the fridge, which means all I’ll need to do on Christmas morning is slice up some apples and bananas.
Ingredients
For the Pancake:
- 110g (4oz) plain flour, sifted
- A pinch of salt
- 2 eggs
- 2 ½ pints of milk
- Butter or oil for the pan
For the Toppings:
- Sugar
- Icing sugar
- Raspberries
- Blueberries
- Apples
- Bananas

Method
1. Sift the flour and salt together into a mixing bowl.
2. Gradually whisk in the eggs and milk until the batter is smooth and free of lumps. Let it rest for a few minutes.
3. Heat up a bit of butter or oil in a nonstick pan over medium heat. Ensure it’s properly heated before adding the batter.
4. Pour the batter into a squeeze bottle for easy shaping, or simply pour directly onto the pan in a snowman outline. If you prefer, you can also make two round pancakes—one for the head and one for the body.
5. Once bubbles start forming on the surface of the pancake, it’s time to flip it. Cook the second side briefly.
6. Decorate your pancake using your favorite toppings. For a snowman, cut an apple slice for the hat, use blueberries or raisins for the eyes and buttons, and carve a banana into a carrot-like nose.
To add a finishing touch, I like to make a raspberry sauce by simmering raspberries, sugar, and a splash of water until it thickens slightly. Spread this sauce into a scarf shape for an extra festive look.
