It's that time of the year again, and what better way to start Christmas Day than with a hearty and festive breakfast? This year, we're sharing a fun and creative pancake recipe that’s perfect for the occasion. Picture this—fluffy pancakes shaped like snowmen, topped with fresh fruits like blueberries, raspberries, and bananas. Not only are they adorable, but they’re also super easy to make!
I’ve always loved the book "Pancakes for Breakfast" by Tomie DePaola. It’s a timeless classic that encourages imagination and storytelling, especially during those quiet moments before the chaos of gift-opening begins. Since we usually don’t spend much of Christmas Day at home, I wanted to make breakfast extra special. And what could be more fitting than snowman pancakes?
The beauty of pancake batter is that it keeps well in the fridge, so I can prepare everything in advance. All I’ll need to do on the day is slice up some apples and bananas. This recipe makes four pancakes, which should be enough to feed everyone while still leaving room for the main feast later.
To get started, you’ll need plain flour, a pinch of salt, eggs, milk, and butter or oil for cooking. For the toppings, feel free to get creative with sugar, icing sugar, raspberries, blueberries, apples, and bananas. Once you’ve got your ingredients ready, follow these simple steps:
1. Sift the flour and salt into a bowl to aerate it.
2. Whisk in the eggs and milk gradually until the batter is smooth and lump-free.
3. Heat a bit of butter or oil in your pan over medium heat.
4. Pour the batter into a squeezable bottle or use a ladle to create a snowman shape. If you prefer, you can also make two round pancakes—one for the head and one for the body.
5. Flip the pancake once bubbles start forming on the surface, and cook the second side briefly.
6. Decorate your pancake with toppings: cut up an apple for the hat, use blueberries or raisins for the eyes and buttons, and slice a banana to resemble a carrot nose.
For the finishing touch, I made a raspberry sauce by heating raspberries with sugar and a splash of water. You could also use jam, chocolate spread, or any other sauce you like to create a scarf-like pattern.
These snowman pancakes are not just delicious—they’re a delightful way to bring some cheer to your Christmas morning. They’re perfect for kids and adults alike, and they add a personal touch to the holiday season.
If you’re looking for more festive breakfast ideas, I recommend trying mini Christmas cakes or Robin Oreos. And who knows? Maybe after breakfast, you can gather the family for a virtual book club session to keep the storytelling going.
Happy holidays, and enjoy your snowman pancakes!
