These delightful Linzer cookies are a true treat with their nutty flavor and melt-in-your-mouth texture. I found the dough incredibly easy to work with and was pleasantly surprised by how well it held its shape when cutting. These biscuits are perfect for special occasions due to their rich taste and beautiful appearance. They're essentially a cookie version of the popular Austrian Linzertorte, which is traditionally enjoyed during the Christmas season.
The girls had a blast helping out in the kitchen, but unfortunately, we couldn't pack them in lunchboxes because of nut allergies. Still, they didn’t last long—gone before the weekend was over!

### Linzer Cookie Recipe
#### Ingredients:
- ¾ cup butter
- ½ cup sugar
- 1 egg
- ½ teaspoon vanilla extract
- 1.5 cups ground almonds
- 2 cups all-purpose flour
- ½ teaspoon baking powder
- Strawberry jam
- Icing sugar
#### Method:
Start by creaming the butter and sugar until smooth. Gradually add in the beaten egg and vanilla, mixing well. Stir in the ground almonds followed by the flour and baking powder, sifting them in gradually to form a cohesive dough.
Let the dough chill in the refrigerator for about half an hour. Once chilled, roll it out to approximately 3mm thickness. Use a cookie cutter to create shapes; each biscuit requires two pieces—one plain and one with a hole in the center (use a smaller cutter for the holes). Place them on a baking tray.
Bake at 170°C (Gas Mark 3) for 10-15 minutes. Allow the cookies to cool completely on a wire rack. Once cooled, spread a layer of jam onto the flat side of the plain cookie and sandwich it with the cookie that has the hole. If desired, add a bit more jam inside the hole for extra flavor.
Finish off with a light dusting of icing sugar. You can get creative with shapes—flowers are great for spring or Easter, stars for Christmas, or hearts for Valentine's Day. We even made a cat-shaped cookie for Rosie, who is obsessed with Hello Kitty. The jam made a perfect "nose."
